Update a sample type meta field's properties

Updates one or more properties on an existing meta-field definition (e.g. label, order, default value). Pass only the fields you want to change in the body — omitted fields are left untouched. Use this for cosmetic or structural tweaks; for changing the field's type or option values when samples already use it, retire the field with DELETE and add a fresh one to avoid breaking existing data.
